Superbowl Recipe Series: Hearty Chili and Loaded Guacamole

Happy Thursday! I can’t believe we’re still in January- anyone else feel like this is the longest month ever?


Our weeks are about to get super busy- we’ve got house closing, jury duty (ugh) and moving day all coming up in the next two weeks. So much to do, and I haven’t started packing at all. So, since I am a big stress ball looking for ways to reclaim my time, I am in the mood for extra simple, extra quick meal prep. Enter: chili and guac.


Both of these are quick prep, minimal cleanup and super shareable for game day (or great to just eat for the week)- try them out and tag me in your photos!


Hearty Gameday Chili


Prep Time: 15 min

Cook Time: 20 min

Total Time: 35 min

Serves: 6-8


INGREDIENTS:

2 lbs 93/7 ground beef

1-2 cans beans (rinsed)

1 28oz can diced tomatoes

1 cup broth

1 Large onion, diced

2 Peppers, diced

1 T chili powder

½ T garlic

½ T cumin

½ T oregano

1 tsp salt


INSTRUCTIONS:

1. Brown the meat and drain the fat.

2. While the meat is browning, saute the veggies.

2. Combine the meat and veggies in a stockpot and add diced tomatoes, beans, and broth until it looks to be your desired consistency (some prefer chunky in which case you’d add less, and some folks prefer a soup like consistency which would require more)

3. Taste and add more spices if desired.

4. Top with cheese, guacamole, plain greek yogurt, and/or sliced green onions.


*You can also make this in the crockpot or instapot. If using the crockpot put everything in (no need to saute veggies) but you still want to brown the meat unless you don't mind the extra fat in the dish. Set it on low for 6-8 hours.

Loaded Guacamole


Prep Time: 5 min

Cook Time: 15 min (for the bacon)

Total Time: 20 min

Serves: 6-8



INGREDIENTS:

4 avocados

3-4 slices bacon

Juice from half a lime

⅓ cup finely chopped red onion ⅓ cup tomatoes, sliced in quarters

1 tsp salt

1 tsp garlic

¼ tsp chili powder

¼ tsp cumin


INSTRUCTIONS:

1. Scoop out the avocados and mash them with lime juice and spices.

2. Top the guac with the bacon, finely diced onion, sliced tomatoes, and green onions.

3. Serve as a side with your favorite tortilla chips, or use as a topping (this guac could be a great topping for the chili!)
